Ingredients:
- 1 cup rolled oats
- 8-10 pitted dates
- 2 tbsp peanut butter (or any nut butter)
- 1 tbsp honey or maple syrup
- 1/4 tsp cinnamon (optional)
- 1/4 tsp vanilla extract (optional)
- Pinch of salt
- 1-2 tbsp water (if needed)
Instructions:
- Blend the dates: Place the pitted dates in a food processor and blend until they form a sticky paste. If your dates are a bit dry, you can soak them in warm water for a few minutes beforehand.
- Add other ingredients: Add rolled oats, peanut butter, honey (or maple syrup), cinnamon, vanilla extract, and a pinch of salt to the food processor. Blend everything together until the mixture is well combined. If the mixture seems too dry, add 1-2 tbsp of water.
- Form into balls: Scoop out small portions of the mixture and roll them into bite-sized balls using your hands.
- Chill and enjoy: You can eat them right away, but for best results, refrigerate them for 10-15 minutes to let them firm up.
