Roasted Sweet Potato and Chickpea Salad
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 cups mixed greens (such as spinach, arugula, and kale)
- 1/4 cup red onion, thinly sliced
- 1/4 cup dried cranberries
- 1/4 cup pumpkin seeds
Dressing:
- 3 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 1-2 tbsp water (to thin the dressing)
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
