- 1 cup oatmeal (90g)
 - 50g dried cranberries
 - Zest of 1 lemon
 - 1/4 cup walnuts, chopped (30g)
 - 1/4 cup dates, chopped (35g)
 - 1 egg
 - 2 tablespoons butter, melted (30g)
 
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
 - Prepare the Oatmeal Base: In a mixing bowl, combine the oatmeal, cranberries, lemon zest, walnuts, and chopped dates. Mix until everything is evenly distributed.
 - Add Wet Ingredients: In a separate bowl, beat the egg lightly, then add it to the dry ingredients along with the melted butter. Stir until the mixture is combined and holds together.
 - Shape the Cookies: Scoop out about 1 tablespoon of dough and shape it into a small ball. Flatten slightly and place on the prepared baking sheet. Repeat with remaining dough, leaving space between each cookie.
 - Bake: Place in the preheated oven and bake for 12-15 minutes, or until the edges are golden brown.
 - Cool and Enjoy: Remove from the oven, let the cookies cool for a few minutes, then transfer them to a wire rack to cool completely.
