Ingredients:
- 4 medium heads of Bok Choy
 - 2 tablespoons olive oil
 - 2 garlic cloves, minced
 - 1 tablespoon soy sauce (low sodium preferred)
 - 1 teaspoon sesame oil
 - Salt and pepper to taste
 - Optional: Toasted sesame seeds for garnish
 
Instructions:
- Rinse the Bok Choy under cold water, pat dry, and trim off the base. If the leaves are large, cut them into halves or quarters.
 - Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until it becomes fragrant.
 - Add the Bok Choy to the skillet, tossing it with the garlic and oil. Cook for about 2 minutes until the leaves start to wilt.
 - Drizzle the soy sauce and sesame oil over the Bok Choy. Season with salt and pepper, then stir everything together well.
 - Continue cooking for another 2-3 minutes until the stalks are tender but still slightly crunchy. Remove from the heat and transfer to a serving dish.
 - For extra flavor and crunch, garnish with toasted sesame seeds if desired.
